Super Vegetable Trio
A crowd pleaser nutritious treat in warm or cool season…

Ingredients
1 large sweet potato
I large turnip*
1 med. rutabaga*
1 small zucchini squash
¼ -½ cup olive oil
Salt
Black Pepper
Italian seasoning
*white potatoes may be substituted.
Directions
- Set oven to 350’.
- Wash, peel and dice first 3 vegetables separately.
- Use equal amounts of each vegetable based on # of servings needed.
- Toss each vegetable selection in olive oil, salt, pepper and Italian seasoning.
- Arrange first three 3 vegetables on a cookie sheet or 9x13 casserole dish with sweet potatoes in center.
- Slice zucchini and place between rows of vegetables.
- Cover dish with aluminum foil for first 20 minutes.
- Remove foil and continue to bake for additional 10 minutes.
- Remove from oven and serve warm.
This nutritional dish pairs well with meat and salad or a baked salmon dish. And hot dinner rolls!
