Orange-Pineapple Delight Salad
AKA: Frog Egg Salad

Ingredients
8 oz Acini di pepe (pasta) or 1 cup Quinoa
1¾ cup pineapple juice
2 tablespoon corn starch
2 eggs
1 cup sugar
1- 20oz can chunk pineapple (drained)
1- 20oz can crushed pineapple (drained)
1- 11oz can mandarin oranges (drained)
2 – 8oz cool whip or 1- 12oz. cool whip
Directions
- Cook pasta or quinoa as directed on box. Drain and set aside.
- In medium sauce pan, combine pineapple juice, corn starch, eggs and sugar.
- Cook on medium heat and whip with whisk until thick.
- Mix with pasta or quinoa and put in the freezer.
- In large mixing bowl, add chunk pineapple, crushed pineapple, mandarin oranges and cool whip.
- Add frozen pasta mixture. Stir to combine.
