Old Fashioned Bean Soup

Ingredients
16 ounce bag of dried beans
2 cups cubed ham
1 large can (28 ounces) of tomatoes
1 cup chopped green onion
½ cup chopped celery
½ cup chopped carrots
2 tablespoon lemon juice
1 teaspoon chili powder
Salt & Pepper to taste
Directions
- Soak beans overnight, if the package recommends.
- Examine beans carefully and remove any foreign objects. Wash thoroughly.
- Place beans, 2 quarts (8 cups) of water, and 2 cups of cubed ham in a large kettle.
- Bring to a boil and simmer for 2 ½ to 3 hours.
- Add remaining ingredients and simmer for another half-hour.
- Serve hot.
