My Mom’s Banana Bread
Makes one loaf
Ingredients
¾ cup chopped walnuts or other nuts
1 ¼ cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
1 cup sugar
2 eggs
½ cup canola oil or other oil
3 medium overripe bananas, mashed
1 teaspoon vanilla
Directions
- Preheat oven 350’.
- Coat a 9 by 5 inch loaf pan with cooking spray.
- Spread walnuts in a pan and toast in the oven for 5-8 minutes.
- In a medium bowl mix flour, baking soda, cinnamon and salt.
- In another bowl, combine sugar, eggs and oil. Beat at high until light colored and creamy.
- Add mashed bananas and vanilla, beat until smooth.
- Stir in dry ingredients and chopped nuts.
- Pour batter into pan and bake 50-60 minutes until top is springy to touch.
