Lentil Soup
Ingredients
2 teaspoon olive oil
1 large onion, chopped
2 cloves garlic
2 large carrots, diced
2 cups brown lentils
8 cups chicken and vegetable broth
2 -14.5 oz cans stewed tomatoes
6 cups shredded kale, leaves only
Balsamic vinegar
Salt & pepper to taste
Directions
- Sauté the onion, garlic and carrots in olive oil for 5 minutes
- Add the lentils, broth and stewed tomatoes and simmer for 20 minutes
- Add the kale, vinegar, salt and pepper and cook 20 minutes
