Fettuccine Alfredo
Ingredients
½ cup unsalted butter
4 garlic cloves, finely minced
2 cups heavy whipping cream
4 ounces cream cheese, cut into small blocks
Salt and freshly ground pepper
Pinch of nutmeg
4 oz parmesan cheese, grated (not pre-shredded) plus extra for serving
Italian parsley, optional
Fettuccine noodles
Directions
- Prepare the noodles according to package directions in well salted water. Do not add oil or rinse after draining.
- In a medium saucepan, melt the butter over medium-high heat. Make sure the butter does not brown. Add the garlic and sauté until garlic is soft but not browned, about 1 minute.
- Reduce heat to medium and add the heavy whipping cream and cream cheese. Whisk until melted. Add a pinch of nutmeg and salt and pepper to taste and stir to combine.
- Bring sauce to a simmer (do not boil) and continue to cook, stirring frequently until sauce starts to thicken, about 3-5 minutes.
- Remove saucepan from the heat and stir in the Parmesan cheese. Continue stirring until cheese is incorporated into the sauce.
- Add noodles to sauce and toss until coated. Garnish with parmesan and parsley, if desired.
