Doris’ Lasagna
Serves: 8
Ingredients
1 lb Italian sausage, pork sausage or ground beef
1 garlic clove minced (½ tsp dried)
3 tablespoons parsley flakes (split use)
1 tablespoon basil
Salt to taste
18 oz canned diced tomatoes
(2) 6 oz. cans if tomato paste
10 oz lasagna noodles (Barilla brand)
Pepper
3 cups cream style cottage cheese (2% cream style small curd)
2 eggs, beaten
2 packs of sliced mozzarella cheese
½ cup Parmesan cheese
Directions
- Brown meat slowly, drain off fat.
- Add minced garlic, 1 tablespoon parsley flakes, basil, salt if desired, diced tomatoes, and tomato paste. Simmer until sauce is thick.
- In the meantime, boil noodles until tender (8 or 9 minutes). Drain and rinse with cold water, and pat with dry paper towels.
- Combine cottage cheese, eggs, parmesan cheese, 2 tablespoons parsley flakes, and pepper.
- Spray 13 X 9 pan. Layer with noodles (4 or 5) on bottom; spread half of cottage cheese mixture, half meat sauce, and then half of mozzarella cheese slices. Repeat layers in same order.
- Bake uncovered @375 for 30 minutes.
- Let stand 15 minutes and then cut.
