Chinese Chicken Salad
Easy
Ingredients
2 cups cooked shredded chicken (can use rotisserie chicken)
3 cups romaine lettuce, thinly chopped
2 cups Napa cabbage thinly chopped
2 cups red cabbage, thinly chopped
1 cup carrots, julienned or shredded
½ cup green onions chopped or thinly sliced
⅓ cup fresh cilantro – can use parsley
1 cup mandarin oranges – drained if from a can
⅓ cup almonds or cashew -can leave nuts out if desired
Dressing
3 tablespoon rice wine vinegar
2 tablespoon reduced sodium soy sauce
2 cloves of garlic, minced
2 tablespoon honey
1 tablespoon fresh grated ginger
2 teaspoon sesame oil
3 tablespoon olive oil
Directions
- Combine all the dressing ingredients in a small jar with a secure lid and shake well.
- Drizzle over tossed salad.
Salad will keep for a couple of days in the fridge.
