Chicken & Tomatoes over Fettuccine

Ingredients
8 oz. sun dried tomatoes in oil
1 tablespoons olive oil
½ chopped onion
2 cloves minced garlic
4 chicken breast halves, diced
3-4 teaspoons chopped fresh basil
¼ teaspoon salt
¼ teaspoon pepper
6 oz. fettuccine, cooked according to package directions
Directions
- Drain tomatoes, save oil, and dice.
- Heat 1 tablespoon oil and sauté onions and garlic until tender.
- Add chicken and sauté until tender.
- Add basil and tomatoes.
- Add 2 tablespoons. reserved oil from tomatoes, salt & pepper.
- Serve over cooked fettuccine pasta (can also use bowtie pasta and add capers).
