Cheek Family Healthy Banana Bites

Makes: 36 mini muffins

 

Ingredients

            Nonstick cooking spray

            1 cup 100% whole wheat flour

¼ cup raw sugar (yes, that's all) or 1/4 cup organic Grade B maple syrup

            1 teaspoon baking powder

            1/3 teaspoon baking soda

            1/3 teaspoon sea salt

            3 eggs

            3 mashed VERY ripe bananas (sometimes I use up to 5!)

            ½ cup melted butter (let it cool)

            Optional: ¼ cup chopped walnuts

 

Directions

  •        Preheat the oven to 375’ (only to 350’ if you use the maple syrup)
  •        Spray nonstick cooking spray in a mini-muffin pan.
  •        In a large bowl, whisk together all the dry ingredients.
  •        In a smaller bowl, whisk together eggs, banana and melted butter. Fold slowly into the dry ingredients.
  •        Pour batter into the mini-muffin pan, filling each cup about ¾ full.
  •        Bake for about 15 minutes, or until springy.
  •        Let cool for about 5 minutes and use a spoon to remove from the pan.
  •        Continue to cool on a wire rack or plate.

Low fat, low carbs, high protein and fiber! NO refined sugars!
