Black Bean, Corn & Feta Dip
Yield: 4 ½ cups
Ingredients
15 ounces black beans rinsed and drained
15 ounces corn, drained
6 ounces crumbled feta cheese
2 green onions chopped
¼ cup apple cider vinegar
2 tablespoons olive oil
¼ cup sugar
¼ teaspoon garlic powder
Directions
- Mix the black beans, corn, feta and green onions together in a bowl.
- Put the apple cider vinegar, olive oil, sugar, and garlic powder into a liquid measuring cup and mix very well. Pour over the contents in the bowl and toss to coat completely.
- Cover with plastic wrap or put into a tightly sealed container and refrigerate for a minimum of 3 hours before serving.
Will keep for about 3 days stored in the refrigerator in a tightly sealed container.
