7-Up Pound Cake

Serves: 10-12

Everyone at sometime will need a pound cake recipe! This is one I use frequently.

 

Ingredients

            2 sticks of butter, softened, not melted

            ½ cup shortening

            1 ½ teaspoon lemon extract

            1 ½ teaspoon vanilla extract

            3 cups plain flour

            7 oz 7-Up soda

            3 cups sugar

            5 eggs

 

Directions

  • Preheat oven to 300’.
  • Cream softened butter, shortening and sugar. Add extract flavors
  • Add eggs, one at a time, beating after each addition.
  • Alternate flour and 7-Up, beating after each addition, finish with 7-Up.
  • Spray 10’ tube pan with Baker’s Joy or grease with shortening and dust with flour lightly.
  • Pour batter into pan and bake for 1 hour or until a cake tester or wooden skewer comes out with no wet crumbs on it.
  • Let cool for 30 minutes in pan before turning out onto a plate.

 

You can make a glaze with powdered sugar and lemon juice or sprinkle it with powdered sugar. Serve plain or with strawberries and ice cream but delicious with nothing added.
